Best practice for signing policies
We have a onboarding course where people need to sign off on certain policies. Right now, we have them download a PDF, sign it using Adobe or other software, and upload it to the Assignments tool.
Has anyone done this a better way? Must be a solution that has Canadian data hosting.

You could also use the Quiz tool and require users to acknowledge they've reviewed the policies before proceeding in the course.
Alternatively, the Terms and Conditions tool might be relevant, though it's typically presented upon login rather than within a specific course. Depending on the needs, presenting policy acknowledgement at the initial login could be another option to consider.
