Hello,
I am looking to reset a course for a user, how can I do this? Removing the quiz attempts is not enough as they can enter the course and redo the quiz without looking at the content again.

I have checked internally regarding your request. Unfortunately, there is currently no way to perform a complete, unconditional wipe of all student-generated activity and progress data for a specific student within a Brightspace course offering via the user interface or standard admin workflows.
At this time, we would like to suggest flagging the desired functionality as a new feature or Product Idea on the Brightspace Community. Posting the idea will allow you to communicate directly with the Product Planning Team and other Brightspace users.

To fully reset a user so they must review course content before retaking a quiz. This removes the user's previous score and allows them to start a new attempt.
If the quiz is controlled by Release Conditions tied to content completion, clearing the content progress will require the learner to revisit the content before the quiz becomes available again.
