I found some websites from other Brightspace user institutions that suggest such sorting for both grades and assignments is feasible, but their screenshots do not match our navigation options (screenshot attached)

If you click onto the assignment name, the list of submissions can be sorted by student name. Alternatively you might be looking at screenshots of QuickEval.
I believe the response above is the default Brightspace organization - each assignment, with all of the students listed inside?
My desire was the opposite sorting — to be able to look at each student and see all of that individual's submissions without going in and out of every single assignment, and then paging through to find the student (3 pages of students), and then clicking on the individual assignment submission(s) and waiting for them to open, etc., etc.
As I wrote this out in detail above, I am doubting that Brightspace has this flexibility, but I will post this comment with hope. Thank you!

I've looked into this query, and unfortunately, it's currently not possible to view all users' submissions for other assignments without navigating through the individual assignment folders.
However, I did find a helpful workaround in Class Progress: If you click on a specific user and then select Assignments, you'll be able to see all of their individual submissions across different activities in one place.
Additionally, you might find Quick Eval useful for viewing the most recent submissions and for easier navigation through them. If you are new to this tool, I am attaching an article that can help you here: https://community.d2l.com/brightspace/kb/articles/4842-about-quick-eval
