Automatic late penalties for quizzes/assignments aren't available yet. You can see how late the submissions were so you can adjust points manually.
Moreover, we collect feedback and ideas in Product Idea Exchange (PIE), where educators can submit new ideas like yours and upvote existing ones they'd like to see implemented. I found a corresponding PIE item (D10512) in review, which you can upvote to help shape our Product Roadmap!

It would definitely be helpful to have automated percentage or point-based deductions for late assignments. Manually correcting the points for weekly assignments is a big ask, especially if you are having to sift through 100s of submissions each week to accomplish such a large task.
At the developmental level, this should be an easy lift since it is standard on most 3rd party websites.
