Can I block integrated Google Translate in Brightspace ?

For example, whenever I type in Spanish on a Chrome browser, my browser automatically corrects my Spanish spelling and grammar. This happens across all of Google Chrome. It happens in my Gmail account all the time. Is there a way to turn off this feature on the Brightspace platform?

No, this feature/functionality is controlled in the browser.
To turn the translation feature off see Change your default page translation settings in the linked Google Chrome Help resource
If you want to disable this browser feature while students are taking a quiz the Respondus Lockdown Browser or similar applications from D2L Partners may provide an option to consider.
