Availability start and end dates
I have a quiz that has an Availability start time of 10:00 and an Availability end time of 10:55. The quiz has a time limit of 50 minutes. If I have students who are eligible to receive extra time, in addition to giving them the extra time, do I also need to change the Availability end time? My understanding was that the Availability start and end times only determine when a student can start the quiz and as long as they start before the end time they will get the entire time limit to complete the quiz. Does this behaviour change if the timer is set as "synchronous"? If a student gets 100 minutes to write and I don't change their end time will the quiz end at 10:55?

There's a few things to consider here.
If you're using an asynchronous quiz, which would mean the timer starts when the student begins the quiz, they would receive the full 50 minute time limit (per your example) regardless of them starting at 10:00 or 10:30.
However, if you enter an End Date/Time of 10:55, a student who begins the quiz at 10:30 will receive that 50 minutes, however they would not be able to re-enter a quiz after the End Time arrives. If they left the quiz at 10:50 and tried to return at 10:56, they would not be able to continue it, even though they have time remaining. While rare, this is an important detail to keep in mind for the availability times you enter.
If you're using a synchronous quiz, meaning the timer begins at 10:00 for all students, the above will happen even for users who have extra time allotted for them. The way to manage this is to use Special Access within the quiz, and while you give them the extra time, also adjust the End Date/Time appropriately for that user(s). Again, this is rare, but say a student had to reboot their computer, you'll want to account for the potential of them not being able to get back into the quiz with their extra time.
