I seem to remember at one point we could scroll to the bottom of a course page and see when that page was created/last edited. This was in Classic.
Can we still see this or add this in for NCE? Is there a config variable I've just missed?

Yes, in the Classic content experience there was an option to scroll to the bottom of a course page and see the page last edited date.
This option is not available in NCE. However, you can still see the last modified date from the Course builder tool
Example:
If you would like more options, I suggest submitting a PIE item or upvoting one that fits your needs and your use case.
