Adding Object from Activity Library (Learning Journal) to course.
I am attempting to add a learning journal to my course. I have seen descriptions of how to do this with single-user discussions, but there is also an activity called "Learning Journal" listed in the Activity Library. How can I add this to my class?

That is correct, you can create a single-user group with restricted discussion areas so learners can keep a journal. Please kindly find below a Brightspace video tutorial that shows how to create private groups for Journaling:

On the other hand, based on the description you kindly provided, it seems that the "Learning Journal" activity is displaying from the drop down list from the Content tool of your course when adding an Activity. If this is the case, this could be related to an External Learning Tool which may be integrated with Brightspace via LTI.
If the New Content Experience (Lessons) is enabled in your course, you can use the Add Existing > External Tool Activity and then click the Create New LTI Link option.
