Hi there, As you mentioned the Brightspace data set Assignment Submissions would be the most effective way of getting this information. The other workaround you can implement is to connect the Assignment to a Grade item, once the assignment is graded the score will transfer to the grade item along with the Faculty/ Instructor that graded the assignment and you can get the Grader in the Modified By column in the Grade item event log. Hopefully this helps.

Within Brightspace itself, you can't see who in particular has provided the feedback. You can see when the students submitted the 'assignments' though, by looking at the submission log for each assignment. There's some guidance on how to do that here: https://community.d2l.com/brightspace/kb/articles/2710-assessing-assignment-submissions
There is data in the Data Hub that would give you what you're asking, but Data Hub would typically be accessible only by the system admins at your university. This is because access to it allows you to see all of the data across your whole Brightspace site, and wouldn't be limited to your Career Center course offering.
