Is there a way to set the summary activity notification to weekly?

That's interesting. On an internal Brightspace site that I have access to at D2L, it allows me to choose 'weekly' as a frequency for the summary of activity emails. I'm not sure why you wouldn't have that option. If you're an Approved Support Contact (ASC) at your organisation, I'd recommend opening a support case to ask. If you're not, contact the team who looks after Brightspace at your organisation, and see if they can raise one on your behalf.
In the meantime, what you could do is set up some email filters in your email tool. I get lots of notifications in Outlook from all sorts of places, so I have filters to send them to a different folder and not my inbox.
