Is there a way to gather statistics in one document for the same test in multiple courses?

Unfortunately, it looks like this option has not been implemented yet.It is possible to copy quizzes from one course to another, but once this is done, they are no longer linked to each other. Moreover, multiple courses are managed by different instructors, which means that instructors from other courses cannot look into the statistics of the courses that they do not teach.

I have s small addition/correction to the message above, you may be able to combine the Quiz Attempts statistics you're looking for by using the Data Hub which is a Brightspace Core feature.
Looking at the Data Hub sets like Quiz Attempts, Quiz User Answer Responses, and Quiz User Answers. They should contain the information you're looking for, but they would require you to further filter the quizzes down to only the ones you're interested in."Please check the article below:
