Hello Paul,
Once you have created the assignments, you can use the Course Builder tool to put them in their respective modules. Also, you can copy assignment from one course to another. So, you would not have to create from scratch in each one.

There is also a Copy Assignment option within the course, so if the parameters are very similar (or could be tweaked with the manage dates tool) that might save some clicks.
