Just as the title says — all my students' future/yet to be submitted assignments in gradebook say "emerging". I haven't marked them or received submissions yet. What setting do I have wrong here? I have six courses and it's only happening in one.

Without having access to your course it feels like the gradeitem is set-up to display the Grade scheme symbol.
You can manage these setting by editing the grade item,:

The text or symbol 'emerging' is derived from your Grade Scheme.

Hi. Thanks for your help :). All my other courses have been set up to use the proficiency scale. They've all been set up exactly the same, but for some reason this one course is showing emerging for all yet-to-be-submitted assignments. I'm confused because I've looked over all settings I'm familiar with in each course…and they're all the same. I just can't figure out why this one is different. It has to be one tiny change, but even with your advice…I can't see it :(.
