As long as you are not Editing the existing activity/assignment, or creating a new activity/assignment you are just creating a link to the existing assignment in the content tool. Existing submissions will be unaffected as you are not editing the assignment.
If in doubt, always test in a sandbox or test course that you may have access to. If none is available, create a new content module and set the visibility to hidden, and add a link to an existing assignment. If you need assistance making the change please connect with you online learning and teaching administration team or open a support case with the D2L support team who can guide you through making the change.

Hi Christina,
As you have suggested, please share the information with your Customer Success Manager. In addition to this you can always raise a case with the D2L Support team with the issues you have identified. These will be passed onto the appropriate internal teams to manage and provide a resolution where feasible. Through the case you'll also be updated with progress the team is making to resolve, and acts as a focal point for conversations with your Customer Success Manager.

@Christina.T.727 This will depend on how your scales are set up, but OutcomesDemonstrations includes two LevelId fields (manually or automatically entered) and the AssessedUserId fields. You'll need to join it to OutcomesScaleLevelDefinition to get the actual level names and OutcomesRegistryOwners if you want to filter to a specific orgunit ID.

Hi Amanda - we currently can't customize any of the language in Parent and Guardian, so it's not really a good choice for this.
We do have the Auditor Tool, though, and this is usually preferred for your use case.
