Unfortunately this functionality is not available, course enrolment limits need to be managed outside of Brightspace. There are no doubt other business rules you would also like to wrap around this functionality such as cascading enrolments into other course offerings once a course enrolment limits is reached.
The idea to set enrolment limits on course offerings in Brightspace is a good one, please consider making a submission into the Product Idea Exchange for review and consideration.
