Setting up a grade category with multiple assignment options

Is there a way to set up a grade category with multiple assignment options so that students only have to complete one of the assignments and the others won't affect their grade? I have a final project with 3 options, all worth the same amount of points.

    Could you set it up as a formula grade item rather than a category and use the max() function to take the highest (only) score from the three?

    @Jennifer.H.49 You can edit the category and select the option Distribute points across all items. Enter the number of points per item, then type 2 before Number of lowest non-bonus items to drop for each user.
