I think what you might be looking for is our Special Access feature.
Special Access can be configured from the Availability Dates & Conditions panel in the quiz setup or Edit Quiz page. Selecting Manage Special Access will allow you to override the applicable start, end, and due dates, as well as things like time limits and number of attempts for specfic users.
