Thank you for reaching out to the Brightspace community regarding exporting assignments and Grades. I'm Tejas, a member of the Product Support team. I have been assigned to this question.

Regarding your query, you can use the export course components option under Import/Export/Copy Components tool. Please find below articles for more detailed information. Unfortunately, you can only export/copy course components, and can't export the scores achieved by users.
