Option for the student to choose between 2 activities

We want to create a course where the student has the option to choose between 2 different activities. Depending on their choice, the chosen content module will be displayed using the release condition tool.

What would be the best way to implement this?

    I don't know about the best way, but you basically need to design a pair of triggers for students to choose between. For example, you could create a checklist with two options and tell them to tick only one. Or you could create a quiz with one question in it and configure the points so that one answer gets 100% and the other gets 0. Then set the release conditions on the content modules accordingly.
