Allow a Student an Additional Assignment Submission
I'd like to give one of my students an additional chance to submit an assignment. I know I can delete their submission, but I'd like them to see my feedback on their first attempt. I know I can globally allow multiple submissions, but I don't want to extend this to all other students. Is there a way to allow just one student to resubmit an assignment?

I think a good option here would be to set up an additional assignment. When you do that, there is an option under Availability Dates & Conditions to Manage Special Access. One of the options for special access is to Allow only users with special access to see this folder. That's to say: the learners won't be able to see the assignment unless you add them via special access.

I considered that, it's just kind of a tedious workaround. I'm surprised there isn't anything more streamlined. It seems like a function that would be very useful for many people, and that other LMS do offer.
