Is there an option to add exceptions to certain students (for example students who need extra time for quizzes due to accessibility)? Or does this have to be done manually?

Yes, you can use the new Accommodations tool via the classlist for quiz accommodations or you can use Special Access in quizzes and other activities to set up accommodations/exceptions for individual students on individual activities.
