I have a question that i have not been able to find definitions for. What is the difference between these two things?

{LastCourseAccessDate}

{LastLoginDate}

 

So, what is the difference between access and login?

The LastCourseAccessDate tracks when a user last accessed a particular course, whereas the LastLoginDate is when they last logged into the site (regardless of which course they accessed, if any).
